Mommy's World Famous Potatoes #OLIVEyouFB

I hope I don't jinx myself by saying that my kids are pretty good eaters. Benjamin still skips a few things at dinner and hesitates about new foods, but Frances and Henry just love to eat all kinds of things. Henry tried his first clam chowder at church a few weeks ago and then, all on his own, tracked down the woman who made it to thank her. Now when he sees her at church he gives her this big goofy grin (and I'm pretty sure she has no idea why!).

They also been very mindful of thanking the chef at dinnertime. As soon as we finishing praying, Henry will ask who cooked dinner and then thank that person for the meal. Sometimes he even tells us how delicious it is before he even takes a bite!

I don't use a lot of recipes when I cook. I mostly make things from memory and add or subtract seasonings based on what's in the cabinets. That's why I laugh when the kids started referring to this side dish as "Mommy's World Famous Potatoes." I'm pretty sure I've not made it the same way twice, but they love it each time and get excited when I bring it to the table.

Here's the recipe, to the best of my memory. Don't be afraid to add your own twist.

Start with:
  • 5-6 potatoes, cubed
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 tablespoon each of basil, oregano, sage
Put all these ingredients in a plastic bag or lidded container. Drizzle about 1/4 cup of olive oil over the top. For this go around, I used the Filippo Berio Olive Oil I received from Influenster to try out. It has a great full-bodied taste that goes great with potatoes. Seal and mix. Shake it good!

Add your potato mixture to a hot frying pan and stir frequently. I add the lid for about half the cooking time to help the cook a little faster. Letting them stick to the bottom of the pan a little can get them nice and crispy too.You decide how you want them.

I've added cumin and red pepper for a spicier version, as well as ranch dressing mix for a tangy twist. Whichever way I cook them, the kids get excited for Mommy's World Famous Potatoes! And if you have leftovers, throw them in a frying pan with some black beans and a couple of fried eggs the next morning!
