National Vegetarian Day

In honor of National Vegetarian Day, we had a delicious quiche last night.  Actually I made dinner for a friend who just had a baby and decided to double up and make one for us as well. Want a recipe?

You will need:
For Filling:
Fresh spinach
Fresh mushrooms, cleaned and sliced
Fresh garlic, minced
Eggs
1/2 cup milk or cream
Shredded Cheese
3 strips of bacon (optional, obviously)

For Crust:
1 cup flour
1/2 teaspoon salt
1/4 cup olive oil or 1/4 cup canola oil
1/4 cup cold water
I cut the bacon into little pieces and fried them in my pan. (If you are going for vegetarian, leave this part out and use some olive oil to cook in.)  Then I added some garlic and mushrooms and cooked those for a while.  Finally I added a big handful of spinach.   While that's cooking, you can make the crust.  Mix the dry ingredients in one bowl and mix the wet ingredients in a separate bowl.  Whisk the wet ingredients until they are frothy and then dump them into the dry ingredients.  Mix everything together well and then press into your pie plate.  This is easy to double and then halve (which is what I did in this case). You do not need to cook this crust ahead of time. 
When the spinach and mushrooms are done cooking, place them on top of your crust.  Mix together six eggs with half a cup of milk (or cream) and pour over the spinach and mushrooms.  Top with some cheese and bake at 400 for about 30 minutes or until everything is set.  Eat and enjoy!
